Recettear: An Item Shop's Tale / Getting Griffe to buy stuff more frequently

On my first loop, I managed to complete the Obsidian Tower on Day 33 and got his adventurer card at the end of Day 36.

The problem is in my second loop is getting Griffe to buy stuff.  He mainly browses, but rarely comes up to the counter.  Anything I can put out on display that he will buy with high frequency?  Note, Griffe is still a relatively new customer in my game.

The question is how often to check for restocks?

I finally got replenishments on Day 11.  They can be so random.  I must have been screwed over on replenishment of the items the previous week, making it painful to not sell the top buyable items..

Has anyone run into the issue of "Out of Stock" on low-stocked items at the Market or Guild? 
ie.: Ferromins, Legendary Scarf, and Demonbane. 

I'm already on Day 9 on my second loop, and these items still have not restocked once.  Any way to make these items restock?
